QUALITY AT A LOWER PRICE
Now working in the kitchen is even more fun! You can choose between a wide range of different knife shapes to suit your cutting tasks. Most of the types from the ProDynamic series are available with different handle colours and ensure compliance with HACCP guidelines.

STEEL QUALITY
The steel X55CrMo14 is the heart of the series. The laser-tested cutting edge guarantees a sharp edge and thus a consistently good cutting performance. This means you cut cleanly and don't crush your food. This preserves valuable ingredients and flavours of your food.

ERGONOMIC HANDLE
The full plastic handle is optimally adapted to your hand. The softer plastic handle gives you a comfortable feeling when cutting and the handle feels light and secure in your hand. The thumb rest optimises the grip when reaching over to weigh and chop. Your knife fits comfortably in your hand so you can work efficiently and accurately.

QUALITY
Each knife is inspected at the end of the production process against F. DICK's high quality standards. The blade spine is rounded, preventing cuts when you need to reach over. The knife falls from the back position and therefore increases work safety in accordance with the standards of the employers' liability insurance association.

KNIFE CARE
All F. DICK knives deserve special care and attention when it comes to maintenance. Proper knife care is crucial. Knives that are forged or have a wooden handle should never be cleaned in the dishwasher. Knives with plastic handles are completely dishwasher safe; however cleaning in a dishwasher is much more aggressive than washing by hand.

The use of highly concentrated detergents, leaving the knives in hot steam for a long time and also the presence of certain food residues can lead to pitting on the blades or even corrosion. We recommend clean the knife by hand with a soft cloth and a mild alkaline detergent. Wipe your knife after cleaning to ensure that tit is thoroughly dry – this will prevent any pitting on the blade. You can occasionally maintain knives with wooden handles with food-safe oils (e.g. olive oil). The oil makes the handle nice and smooth and prevents shrinkage and cracks.

PROFESSIONAL KNIFE STORAGE
For your safety and to protect the cutting edges of the blades, we recommend that you store the knives in a suitable knife block or on a magnetic rail. When buying a knife block, make sure you buy one with enough space and horizontal slots to protect the knife blades. We recommend our own blade guard for storage in a drawer - Edge Guard. or alternatively, dimensionally accurate compartments built into the drawer.

BLADE GUARD FOR KNIVES
Blade guard – Edge Guard, the special blade guard for storage, especially in drawers. Click here to see the blade guard for blades up to 26 cm.

KNIFE BLOCK FOR KNIVES
Knife block: Knife block with tourne knife, paring knife, boning knife, carving knife, bread knife, chef's knife, meat fork, sharpening steel and kitchen shears.

HOW DO KNIVES STAY SHARP FOR A LONG TIME?
Knives stay sharp for a long time if they are only used for their intended purpose. The knives should only be used for cutting and not chopping.
Bones or the like should therefore only be cut with a cleaver.

WOODEN OR PLASTIC CUTTING BASES
Hard surfaces such as stone (e.g. marble) or glass should not be used as a base, as they quickly blunt the knives.

FAQ

FAQ

People Also Ask:

Q: What is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" best used for?

A: The F. Dick ProDynamic Filleting Knife (Flex) 8.5" is designed for filleting fish, removing skin, and making precise cuts around bones with minimal waste. Its flexible blade allows the knife to follow the natural contours of fish and other delicate proteins. This helps operators separate meat cleanly while maintaining yield and presentation quality. The 8.5-inch blade length provides reach for larger fish while still offering the control needed for detailed trimming work. The flexible construction makes it particularly useful when working close to skin, rib bones, and delicate flesh.

Q: Who should use the F. Dick ProDynamic Filleting Knife (Flex) 8.5"?

A: This knife is well suited for professional chefs, fishmongers, seafood processors, culinary students, and serious home cooks who regularly prepare fish. Users who need precision, flexibility, and efficient filleting performance will benefit most from this knife. Its ergonomic handle and lightweight feel support repetitive cutting tasks throughout a shift. For operations processing fish daily, a dedicated filleting knife can improve consistency, speed, and yield compared with using a general-purpose chef knife.

Q: Why choose a flexible filleting knife instead of a rigid knife?

A: A flexible filleting knife offers greater control when following bones, skin, and natural muscle structures. The blade flexes as it moves through fish, helping reduce tearing and unnecessary product loss. This is especially important when working with delicate species where presentation and yield matter. Rigid knives generally provide more force, while flexible filleting knives prioritize precision and clean separation.

Q: Can the F. Dick ProDynamic Filleting Knife (Flex) 8.5" handle large fish?

A: Yes. The 8.5-inch blade provides sufficient length for many medium and large fish species commonly processed in commercial kitchens and seafood departments. The combination of blade length and flexibility allows users to make long, smooth strokes while maintaining close contact with bones and skin. For very large fish processing operations, longer specialized filleting knives may also be considered, but this size offers a versatile balance between maneuverability and reach.

Q: Is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" suitable for beginners?

A: Yes. The knife is designed with an ergonomic handle and secure grip characteristics that support controlled cutting. New culinary professionals and students often benefit from using a purpose-built filleting knife because it encourages proper fish fabrication techniques. As with any sharp professional knife, users should develop correct handling and safety practices before attempting advanced filleting tasks.

Q: Can this knife be used for trimming meat as well as fish?

A: Yes. While designed primarily for fish preparation, the flexible blade can also be useful for trimming silver skin, removing membranes, and performing detailed protein fabrication work. Many chefs use flexible filleting knives for precision trimming tasks where a rigid blade may remove more product than necessary. The knife performs best when clean, controlled cuts are required rather than heavy-duty butchery work.

Q: How sharp is the F. Dick ProDynamic Filleting Knife (Flex) 8.5"?

A: The knife features a laser-tested cutting edge designed to deliver consistent sharpness and cutting performance. A sharp edge helps create cleaner cuts and reduces crushing or tearing of delicate proteins. This contributes to better presentation and improved product yield. Consistent sharpness is particularly important when filleting fish because precision directly affects the quality of the finished portion.

Q: What steel is used in the F. Dick ProDynamic Filleting Knife (Flex) 8.5"?

A: The blade is manufactured from X55CrMo14 stainless steel. This steel is widely used in professional kitchen knives because it balances corrosion resistance, durability, and ease of maintenance. For commercial users, this combination supports dependable daily performance while remaining practical to sharpen and maintain.

Q: What results should users expect from this filleting knife?

A: Users can expect clean cuts, precise fish fabrication, and better control when working close to skin and bones. The flexible blade helps maximize usable product while minimizing unnecessary waste. This is especially valuable in seafood operations where yield directly affects profitability. When maintained properly, the knife supports consistent day-to-day performance in both professional and home kitchens.

Q: Is the handle comfortable for extended use?

A: Yes. The ProDynamic series uses an ergonomic soft plastic handle designed for comfort and secure handling. The handle is shaped to fit naturally in the hand, helping reduce fatigue during repetitive cutting tasks. An integrated thumb rest further improves grip and control. These features are particularly beneficial for chefs and seafood professionals who spend extended periods processing fish.

Q: Is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" suitable for commercial kitchens?

A: Yes. The knife is designed as part of F. Dick's professional ProDynamic range, which focuses on dependable daily performance and ergonomic handling. Its stainless steel blade, durable synthetic handle, and consistent cutting characteristics make it appropriate for demanding kitchen environments. The knife is particularly useful in seafood stations, restaurants, catering operations, and institutional kitchens.

Q: Is the ProDynamic handle designed with safety in mind?

A: Yes. The handle includes a thumb rest that supports a more secure grip during cutting. Additionally, each knife is inspected against F. Dick's quality standards, and the blade spine is rounded to improve handling comfort and safety. These details help operators maintain control during precision work.

Q: Is the F. Dick ProDynamic Filleting Knife dishwasher safe?

A: The plastic handle construction allows dishwasher cleaning, but hand washing is generally recommended for long-term knife care. Commercial dishwashing environments can expose knives to aggressive detergents, extended moisture, and high temperatures that may affect blade condition over time. Cleaning by hand and drying immediately after washing remains the preferred maintenance practice.

Q: What cutting surfaces should be used with the F. Dick ProDynamic Filleting Knife (Flex) 8.5"?

A: Wooden and professional-grade plastic cutting boards are recommended. These materials help preserve edge sharpness while providing a safe cutting surface. Hard materials such as stone, marble, or glass can dull the blade much more quickly. Selecting the proper cutting surface helps extend sharpening intervals and overall knife life.

Q: What accessories work well with the F. Dick ProDynamic Filleting Knife (Flex) 8.5"?

A: Suitable accessories include blade guards, knife blocks, magnetic knife rails, sharpening steels, and professional cutting boards. Proper storage protects the cutting edge, while regular honing helps maintain consistent performance between sharpening sessions. These accessories support safer handling and longer service life.

Q: How does the F. Dick ProDynamic Filleting Knife (Flex) 8.5" compare with a chef knife for fish preparation?

A: A chef knife is designed for a broad range of kitchen tasks, while a flexible filleting knife is optimized specifically for fish fabrication. The flexible blade allows more precise movement around bones and skin, helping improve yield and reduce waste. For operators regularly preparing fish, a dedicated filleting knife provides greater control than a standard chef knife.

Q: How does the ProDynamic series compare with premium F. Dick knife series?

A: The ProDynamic series emphasizes practical professional performance, ergonomic handling, and value. Premium series such as 1905, Premier Plus, and other forged collections often include upgraded construction methods, premium materials, or distinctive design features. For many commercial kitchens, ProDynamic offers the essential cutting performance needed for daily production without moving into higher-priced premium categories.

Q: Is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" reliable for high-volume seafood preparation?

A: Yes. The knife is designed for consistent professional use where precision and repeatability are important. Its stainless steel blade, ergonomic handle, and laser-tested edge support efficient processing during busy service periods. Seafood departments, fish counters, and restaurant prep teams can benefit from its balance of performance and practicality.

Q: Is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" a good choice for culinary students?

A: Yes. It provides access to a professional-grade filleting knife without the complexity or cost often associated with premium specialty collections. Students can learn proper fish fabrication techniques using a tool designed specifically for the task. The ergonomic handle also supports skill development through controlled cutting.

Q: Is the F. Dick ProDynamic Filleting Knife (Flex) 8.5" suitable for serious home cooks who prepare seafood regularly?

A: Yes. Home cooks who frequently prepare whole fish or larger seafood cuts will benefit from the knife's flexibility and precision. Rather than adapting a general-purpose knife, users can work with a blade specifically designed for filleting tasks. This often leads to cleaner cuts, less waste, and greater confidence when preparing seafood at home.
