Profboard cutting sheets are made of high-quality PP (polypropylene). Both sides of the sheets can be used and the material is gentle on your knives. PP is food approved and can either be recycled or disposed of in a way that does not harm the environment. Cutting sheets should be replaced at regular intervals – or when badly scratched to ensure the best possible hygienic practices. Profboard cutting sheets are also dishwasher safe.

The sheets can withstand all common detergents and can be cleaned in the dishwasher or under the tap. If a dishwasher is used, it is very important that the sheets are completely level, otherwise they may tickle during the drying process. The sheets must never be subjected to strain during washing.
Avoid placing hot pots and pans on the sheets, as this will damage them. Cutting sheets are primarily for cold ingredients. For hot dishes, it is instead recommended to use the Carving board. Just like the base board, the sheets will expand when subjected to heat (dishwasher), but they will retract to their original size when cooled back to room temperature. Please note that the base board and sheets only fit together when they are each at room temperature.
Q: How do I pick the right replacement sheet?
A: Match two things: the size of your board, and the color to the food you will cut on it. The size has to be exact, because sheets do not swap between board sizes.
Q: What sizes do single sheets come in?
A: Five: 24 x 34, 30 x 40, 30 x 50, 32.5 x 53 and 40 x 60cm, covering every Profboard base in the 270 and 670 ranges.
Q: What do the seven colors mean?
A: Red is raw meat, yellow poultry, blue seafood, green vegetables, white dairy, black serving and purple allergens. That is the whole point of the system: one surface per food type.
Q: Should I buy a single sheet or the five pack?
A: A single is for replacing one worn sheet or adding a color you do not have yet. If it is a color you use constantly, the five pack works out better.
Q: How often should I replace a sheet?
A: When it is badly scratched, rather than on a schedule. You can use both sides first, which roughly doubles how long each one lasts.
Q: Why does a scratched sheet matter?
A: Deep knife cuts trap residue that washing does not reliably reach. Replacing a worn sheet is a hygiene decision, not a cosmetic one.
Q: >>> Can I use a sheet for hot food?
A: No. Profboard say the sheets are for cold ingredients and recommend the Carving board for hot dishes. Putting a hot pan on a sheet will damage it.
Q: Can I put them in the dishwasher?
A: Yes, but they have to lie completely flat. A sheet left at an angle can distort as it dries, and they should never be wedged or strained in the machine.
Q: Why will my sheet not click back onto the board?
A: Almost always temperature. Both the sheet and the base expand with heat and shrink back as they cool, and they only fit together properly at room temperature. Let both cool first.
