Q: What is the multipurpose tray for?
A: General work across the kitchen: baking, roasting, transporting, holding and prepping. It is the tray you reach for when the job does not call for a specific one.
Q: What does 2mm thickness change?
A: It heats and cools quickly, which suits baking where an even, responsive base matters more than heat retention. A heavier tray holds temperature longer but takes longer to get there.
Q: Is a 2mm tray prone to warping?
A: Any light tray can distort under sudden temperature change. Avoid putting a hot tray under cold water, which is the most common cause, and it will stay flat through normal use.
Q: What makes this a Gastronorm tray rather than a baking sheet?
A: The footprint. It is built to GN1/1 at roughly 53 x 32cm, so it fits commercial ovens, racks and trolleys directly, where a domestic baking sheet has no standard size and fits nothing reliably.
Q: How does it compare with the deeper GN pans?
A: By purpose. The 2, 5.5 and 10cm pans are cooking vessels chosen by how much they hold. This is a flat working tray, closer to a baking sheet in the GN format.
Q: Does it need lining?
A: Generally not. The Lotan coating handles release for most baked and roasted items, which is a real saving on a tray used repeatedly through a shift.
Q: Can it be used for transport and holding as well as cooking?
A: Yes, and that is where multipurpose earns the name. The GN standard means the same tray moves between oven, rack, trolley and prep bench without changing container.
Q: How many will fit in a standard rack?
A: As many as the rack has slots, since it is built to the GN1/1 footprint. A light flat tray also stacks more closely than a deep or handled pan.
Q: Does a light-gauge tray need different care?
A: Only in one respect: avoid thermal shock. Let it cool before washing rather than putting a hot tray under cold water, which is what distorts a thin tray over time.
