Q: What is the flat universal tray for?
A: General baking and roasting where the base needs to be solid: traybakes, biscuits, sheet cakes, roasted vegetables, or anything releasing liquid or fat.
Q: Why choose flat over perforated?
A: Because a solid base contains everything. Perforations improve crust on buns and rolls but let batter, fat and liquid through, which makes them wrong for most other baking.
Q: Is a 0.2cm tray thick enough not to warp?
A: It is a light gauge by design, so it heats quickly and evenly. Very rapid temperature change is what distorts any thin tray, so avoid putting a hot tray under cold water.
