Q: Why would a Gastronorm pan need to be induction compatible?

A: Because it lets you cook on the hob and then move straight to the oven or a rack in the same pan. A conventional GN tray cannot be used on a hob at all, so browning has to happen somewhere else.

Q: What does that change in practice?

A: It removes a transfer. Sear or sweat on the induction hob, then move the same pan into the oven or a holding cabinet, so nothing is lost between vessels and there is one less item to wash.

Q: Will a 53 x 32cm pan fit an induction zone?

A: It will overhang almost any single zone, so heat reaches only the area above it. Use a bridged or flexible zone if the hob has one, and expect the pan to conduct heat outward from wherever the zone sits.

Q: Is that a problem for a shallow pan?

A: It matters more here than on a deep one, because contents spread across the whole base rather than pooling over the heated area. Move food around the pan rather than assuming an even surface.

Q: Does the induction base change the pan's external dimensions?

A: No. It remains GN1/1 at roughly 53 x 32cm, so it fits the same racks, trolleys and ovens as every other pan in the range. The base changes what it can sit on, not what it fits into.
