Q: What does the BBQ surface do on a Gastronorm pan?
A: It raises the food on a ridged pattern so it makes contact in lines rather than across the whole base. That gives grill marks and lets fat drain below the contact points.
Q: What does a ridged surface do at Gastronorm scale that a grill pan cannot?
A: Volume. A grill pan marks two or three portions; a GN1/1 ridged pan marks a service batch in one oven cycle, and the result goes straight onto the same racking as everything else.
Q: Why does this version have handles?
A: Because a full GN1/1 pan is awkward and heavy, and a ridged one carries hot fat. Handles let you lift it level with both hands out of an oven or a rack.
Q: Can I get grill marks in an oven rather than on a grill?
A: Yes, provided the pan is properly preheated. The ridges hold the heat and mark the food where they touch, which is the same mechanism as a grill pan on a hob.
Q: What should not be cooked on it?
A: Anything loose, wet or small. It falls into the channels, burns and is difficult to remove. Use a flat GN pan for those.
Q: How is the rendered fat managed?
A: It collects in the channels below the food, which is the point. Pour it off between batches rather than letting it build up and smoke on the next cycle.
Q: Do the handles stop it fitting standard Gastronorm racking?
A: The pan body is GN1/1 at roughly 53 x 32cm, but handles add width at the ends. On tightly spaced racking that can be the difference between fitting and not, so measure before standardizing on the handled version.
Q: Is a ridged pan harder to clean?
A: Ridges hold residue where a flat surface does not, so work along the channels rather than across them. The coating means it lifts without abrasives, which would wear the ridge tops first.
Q: Does it stack with the other GN pans?
A: It shares the GN1/1 footprint, though handles change how pans sit together. Check the stack rather than assuming it nests as closely as a handleless pan.
Q: What is the difference between this and the induction version?
A: The base. The A25333GBBQI is built for induction hobs and this one is not. Surface, handles, footprint and depth are identical.
