DESIGNED FOR PROFESSIONAL USE

ErgoGrip series knives are uncompromising in ergonomics and sharpness. These reliable and robust butcher's knives are designed for everyday use. Top professional quality for hygienic, fatigue-free work. This series exclusively uses high-quality knife alloys (X55CrMo14) and material compositions for the blade and the handle.

BALANCED HARDNESS

The blade's hardness of 56° HRC significantly reduces material consumption and ensures that the cutting edge has a long life time. This means less sharpening which can save material and time, increase productivity and reduce accidents thanks to fatigue-free, energy-saving work. Each blade is individually case-hardened and monitored for optimum results with overall hardness and structure. Each cutting edge is also given a polishing finish.

MAXIMUM HYGIENE

Less residue can adhere to the blade thanks to the polished surface, making it corrosion-resistant and easier to clean. There is no gap at the blade exit from the handle, and the handle absorbs neither grease nor dirt. Easy to clean and resistant to heat, shocks and abrasion, this series has been awarded the American NSF seal for hygiene and quality.

SAFETY FEATURES

For your safety, the handle is shaped with an extra-wide thumb rest and pronounced finger guard, and the back of the blade is rounded. The finger guard on the handle prevents your hand from accidentally slipping off and coming into contact with the knife blade. The ergonomic and non-slip handle sits comfortably in your hand for precise guidance and improved efficiency.

KNIFE CARE
All F. DICK knives deserve special care and attention when it comes to maintenance. Proper knife care is crucial. Knives that are forged or have a wooden handle should never be cleaned in the dishwasher. Knives with plastic handles are completely dishwasher safe; however cleaning in a dishwasher is much more aggressive than washing by hand.

The use of highly concentrated detergents, leaving the knives in hot steam for a long time and also the presence of certain food residues can lead to pitting on the blades or even corrosion. We recommend clean the knife by hand with a soft cloth and a mild alkaline detergent. Wipe your knife after cleaning to ensure that tit is thoroughly dry – this will prevent any pitting on the blade. You can occasionally maintain knives with wooden handles with food-safe oils (e.g. olive oil). The oil makes the handle nice and smooth and prevents shrinkage and cracks.

PROFESSIONAL KNIFE STORAGE
For your safety and to protect the cutting edges of the blades, we recommend that you store the knives in a suitable knife block or on a magnetic rail. When buying a knife block, make sure you buy one with enough space and horizontal slots to protect the knife blades. We recommend our own blade guard for storage in a drawer - Edge Guard. or alternatively, dimensionally accurate compartments built into the drawer.

BLADE GUARD FOR KNIVES
Blade guard – Edge Guard, the special blade guard for storage, especially in drawers. Click here to see the blade guard for blades up to 26 cm.

KNIFE BLOCK FOR KNIVES
Knife block: Knife block with tourne knife, paring knife, boning knife, carving knife, bread knife, chef's knife, meat fork, sharpening steel and kitchen shears.

HOW DO KNIVES STAY SHARP FOR A LONG TIME?
Knives stay sharp for a long time if they are only used for their intended purpose. The knives should only be used for cutting and not chopping.
Bones or the like should therefore only be cut with a cleaver.

WOODEN OR PLASTIC CUTTING BASES
Hard surfaces such as stone (e.g. marble) or glass should not be used as a base, as they quickly blunt the knives.

FAQ

FAQ

People Also Ask:

Q: What is the F. Dick ErgoGrip Curved Semi-Flex Boning Knife 6" best for?

A: The F. Dick ErgoGrip Curved Semi-Flex Boning Knife 6" is designed for removing bones, trimming connective tissue, and separating meat with precision and control. The curved blade helps follow natural contours around joints and bones, reducing unnecessary meat loss during fabrication. Its semi-flexible construction provides enough movement to work closely around bone structures while maintaining control through longer cutting motions. This knife is particularly useful in butcher shops, meat processing operations, commercial kitchens, and any environment where meat preparation is a daily task.

Q: Who should use the F. Dick ErgoGrip Curved Semi-Flex Boning Knife?

A: This knife is designed primarily for butchers, meat cutters, chefs, culinary students, and foodservice professionals who regularly process meat. Its blade geometry supports detailed trimming work that requires accuracy rather than heavy cutting force. Users who break down primal cuts, trim silver skin, portion proteins, or prepare poultry will benefit most from this knife's design. For occasional home cooks, it can also be an effective specialty knife when precision meat preparation is required.

Q: Why choose a boning knife instead of a chef's knife for meat fabrication?

A: A boning knife provides significantly greater precision when working around bones, joints, and connective tissue. Unlike a chef's knife, the narrower blade profile allows the user to work in tighter spaces and follow the shape of the meat more closely. This often results in cleaner cuts, improved yield, and better portion control. For professional meat preparation, a dedicated boning knife is typically considered an essential tool rather than an optional accessory.

Q: Can the F. Dick ErgoGrip Curved Semi-Flex Boning Knife handle large cuts of beef and pork?

A: Yes. The knife is well suited for trimming and deboning larger cuts of beef and pork. The curved blade helps maintain contact with the meat during longer cuts, while the semi-flex blade provides enough responsiveness to follow bone structures efficiently. This combination supports both precision trimming and higher-volume fabrication work. For breaking down entire primals, it is commonly paired with larger butcher or breaking knives.

Q: Is the F. Dick ErgoGrip Curved Semi-Flex Boning Knife suitable for poultry processing?

A: Yes. The blade profile is particularly useful when separating poultry joints and removing bones. The semi-flex characteristic allows the blade to move around smaller skeletal structures without excessive force. This helps create cleaner cuts and can improve efficiency when processing chicken, turkey, or other poultry products. Many poultry-focused operations prefer semi-flex boning knives because they balance maneuverability with stability.

Q: Is this knife suitable for beginners or mainly for professionals?

A: The knife is suitable for both, although it is designed with professional use in mind. Experienced users will appreciate the control offered by the curved semi-flex blade. Beginners can also benefit because the narrower blade encourages more precise cutting techniques and improved knife handling habits. As with any boning knife, proper technique improves both safety and cutting performance.

Q: How precise is the F. Dick ErgoGrip Curved Semi-Flex Boning Knife?

A: This knife is built specifically for precision meat preparation. The narrow blade profile allows users to work close to bones and connective tissue. The curved shape improves cutting flow during trimming, while the semi-flex construction helps the blade follow contours rather than forcing straight-line cuts. These characteristics make it well suited for minimizing waste and improving yield.

Q: What results should users expect during daily meat processing?

A: Users should expect cleaner trimming, more accurate deboning, and improved control around complex cuts. The knife is intended to support efficient fabrication while reducing unnecessary removal of usable meat. Over time, this can contribute to improved consistency and better portioning standards. For professional operations, consistency is often as important as speed.

Q: How durable is the F. Dick ErgoGrip series for daily commercial use?

A: The ErgoGrip series is designed as a professional workhorse line intended for repeated daily use. F. Dick is widely recognized for producing knives for chefs, butchers, and food processing professionals, with an emphasis on practical performance, ergonomic handling, and durability. Within commercial environments, the series is commonly selected where reliability, comfortable handling, and consistent cutting performance are priorities.

Q: What advantages does the curved blade provide?

A: A curved boning blade allows smoother movement around bones and joints. Rather than requiring repeated straight cuts, the curvature helps maintain blade contact throughout the cutting motion. This can improve control and reduce effort during trimming and deboning tasks. The design is especially useful when following natural muscle structures.

Q: Why choose a semi-flex boning knife instead of a stiff boning knife?

A: A semi-flex blade offers a balance between control and adaptability. It provides enough flexibility to follow contours closely while maintaining sufficient rigidity for accurate cutting. Many meat processors consider semi-flex knives versatile because they perform well across multiple protein types. Stiffer blades are often preferred for heavier cuts, while more flexible blades excel at detailed trimming.

Q: Is the ErgoGrip handle comfortable during long shifts?

A: The ErgoGrip series is designed around secure and ergonomic handling. For professionals performing repetitive cutting tasks, handle comfort plays a significant role in reducing fatigue and maintaining control throughout the workday. F. Dick's professional knife lines are generally recognized for ergonomic grip design and practical handling characteristics. This makes the series well suited to high-volume foodservice and processing environments.

Q: Is the F. Dick ErgoGrip Curved Semi-Flex Boning Knife easy to maintain?

A: Yes. Like most professional boning knives, it benefits from routine edge maintenance and proper cleaning. Regular honing helps maintain cutting performance, while prompt cleaning and drying help preserve the blade over time. F. Dick also offers a broad sharpening ecosystem designed to support long-term knife performance. Consistent maintenance generally extends both edge life and overall usability.

Q: What accessories pair well with this boning knife?

A: The most common accessories include sharpening steels, knife storage solutions, protective sheaths, and knife rolls. For professional users, a sharpening steel is often considered essential because it helps maintain edge alignment between sharpenings. F. Dick is particularly well known for its sharpening systems and maintenance tools. Using appropriate maintenance accessories helps maximize long-term performance.

Q: What makes the ErgoGrip series different from other F. Dick knife series?

A: The ErgoGrip series focuses on practical, professional utility and ergonomic handling. While premium collections may emphasize forged construction, heritage design, or distinctive aesthetics, the ErgoGrip line prioritizes dependable daily performance in demanding work environments. This makes it particularly attractive for butchers, processors, culinary schools, and production-oriented kitchens. The emphasis is on function, durability, and comfort during repetitive use.

Q: What is included with the F. Dick ErgoGrip Curved Semi-Flex Boning Knife?

A: The product includes the boning knife itself. Additional accessories such as knife guards, sharpening steels, storage systems, or carrying solutions are typically purchased separately unless specifically stated within the product listing. Checking the individual product specifications is recommended when evaluating package contents.

Q: How does the F. Dick ErgoGrip Curved Semi-Flex Boning Knife compare to a flexible boning knife?

A: A semi-flex boning knife provides greater stability while still offering contour-following capability. A fully flexible knife may excel at delicate trimming and fish work, while a semi-flex design is often considered more versatile across beef, pork, poultry, and general protein fabrication. For many professional kitchens, semi-flex blades represent a practical middle ground.

Q: How does the F. Dick ErgoGrip Curved Semi-Flex Boning Knife compare to the F. Dick ActiveCut Boning Knife?

A: Both are designed for professional meat preparation, but they target slightly different user preferences. The ErgoGrip series emphasizes ergonomic handling and dependable daily operation, while the ActiveCut line is positioned as a forged professional series intended for users seeking a more premium construction approach.
